8 Serves

1 cup red lentils
1/3 cup French (blue) lentils
2 Tbsp olive oil
1 red onion, chopped finely
2 cloves garlic, minced
1 Tbsp tomato paste
1 tsp ground cumin
1/2 tsp ground black pepper
Pinch of chilli powder
Juice of 1/2 lemon
4 vegetarian stock cubes + 2 litres water
1 large carrot, peeled, sliced into chunks
1 Tbsp fresh coriander, chopped finely

1. Heat olive oil in a large pot. Add onions, garlic, and stir fry until the onion takes on a slightly translucent look.
2. Stir in tomato paste, black pepper, cumin, chilli and mix through.
3. Add water, vegetable stock cubes, lentils and carrot. Bring to the boil, cover and simmer for 30 minutes.
4. Stir in lemon juice and finely chopped coriander, and serve.
