1/2 cup brown rice
1 head of cauliflower, broken into florets
1 broccoli head, broken into florets
2 capsicums, seeded and diced
3/4 cup tamari almonds
1/4 cup tamari sunflower seeds
2 vegetable stock cubes
2 garlic cloves, minced
2 cup chopped goat cheese
3 Tbsp tamari
1 large or two small onions, diced
3 cups water
1 tsp mixed herbs (e.g. oregano, thyme, chilli)

1. Preheat oven to 180ºC.
2. In a large baking dish combine water, stock cubes, brown rice, half the onion, tamari, and herbs. Cover with foil and bake for 1 hour.
3. In a wok, stir fry garlic, remaining onion and vegetables until tender. Add to the rice mixture in the baking dish, cover and bake for an additional 10-15 minutes.
